PUMPKIN BREAD

Spent the day managing to get that big squash squished and into about 8 loaves of squash bread and three pumpkin pies. The pie recipe used melted ice cream instead of cream, but tool longer to cook.

Spent the day managing to get that big squash squished and into about 8 loaves of squash bread and three pumpkin pies. The pie recipe used melted ice cream instead of cream, but tool longer to cook.

Pumpkin or Squash Bread
3 1/2 cups flour3 cups sugar1 teaspoon nutmeg1 teaspoon salt1 teaspoon ground ginger1 teaspoon baking powder1 teaspoon baking soda2 teaspoons cinnamon4 eggs slightly beaten1/4 cup oil1 cup nuts1 cup raisins2/3 cup water1 lb. Can of pumpkin or squash
Mix all dry ingredients together. Add remaining ingredients. Generously grease and flour three 1 lb. Coffee cans. Divide batter equally. Bake 1 hour at 350. Cool and wrap in foil.
